Twenty-eight litres of Gir cow milk. One night for the curd to set. A thousand turns of the wooden churn. One slow fire, watched by ear. One litre of Sonagir.

01 · The cow
Only the Gir.
Only Saurashtra.
One of India's oldest native breeds, from the forests of Gujarat. Her milk carries the A2 beta-casein protein. Our partner goshalas let the herd graze free — and the calves drink first.

Set
Turned to curd overnight in clay pots.

The bilona — wood, rope and two hands — until the makkhan rises.
- IV
Clarify
Low flame in brass, until it goes quiet and clear.
Most ghee skips the curd and churns cream by machine. It's faster. It isn't this.
03 · The recipe
Five thousand years old.
We didn't improve it.
Ghee from the bilona is as old as the stories of the butter thief who loved it. We changed one thing: now you can check it.
04 · The proof
Trace your jar.
Every lid carries a batch code. Enter it to see when it was churned, where, and what the lab found.

Good to know.
What does "A2" mean?
Milk contains beta-casein protein in two common forms, A1 and A2. Native Indian breeds like the Gir produce milk with the A2 form. We test our partner herds and keep the certificate on file.
Why does bilona ghee cost more?
Ghee made from curd instead of cream needs roughly 25–30 litres of milk per litre, and the churning is done by hand. Slower, smaller, costlier — and you can taste it.
Mine is grainy / solid / liquid. Is that normal?
Yes. Good ghee sets into a grainy (danedar) texture and changes with the room — liquid in summer, solid in winter. Neither affects quality.
How long does it keep?
About 12 months sealed. Once open, use a dry spoon and keep it closed — no fridge needed.
Do you ship outside India?
Not yet. UAE, UK and US are next — leave your email below and we'll tell you first.
